Turkey Bacon & Spinach Frittata

Ingredients

    • 8 strips of turkey bacon, thinly sliced
    • 1 T. of coconut oil
    • 1 1/2 cup of fresh spinach
    • 1/4 cup chives, chopped
    • 3 oz. goat cheese, crumbled
    • 8 eggs
    • 1/2 cup of 2% milk

Cooking Instructions

  1. 1Heat medium sized oven safe skillet to medium high heat.

  2. 2Slice turkey bacon into thin strips.

  3. 3Add coconut oil and turkey bacon slices to pan. Sauté until crispy.

  4. 4Add fresh spinach.

  5. 5Sauté until cooked down.

  6. 6In a separate bowl, whisk eggs and milk.

  7. 7Add milk mixture to turkey pan.

  8. 8Stir ingredients together and let sit for 4 minutes. Top with crumbled goat cheese and chopped chives.

  9. 9Put pan in 350° oven for 10-12 minutes, or until frittata has set.

  10. 10Slide frittata out of pan onto a cutting board and serve!
