- 2 sandwich thins
- 5 egg whites
- Turkey bacon, 2 strips
- 1/2 tomato, diced
- 1/4 cup mozzarella cheese, shredded
- 1 tsp almond milk
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder (optional)

1Preheat oven to 375 degrees F. In a small bowl, combine the egg whites, almond milk, salt, pepper and garlic powder. Pour into a preheated medium nonstick skillet and cook, constantly breaking up the egg to scramble.
2Place the turkey bacon on a microwave safe plate lined with a paper towel. Microwave on medium for approx 1 1/2 -2 minutes - the strips should be slightly crispy on the edges. Allow the bacon to cool then break it up and add it to a medium bowl along with the scrambled egg whites, diced tomatoes and mozzarella cheese. Use a spoon or a fork to combine the ingredients thoroughly.
3Separate the sandwich thins and line them up on a baking tray. Divide the mixture among the sandwich thins and place in the oven for 8-10 minutes or until the cheese has fully melted and the thins are slightly crispy. Enjoy!
