1Chop the leeks, place in large container with cold water. Rinse to remove any dirt

2Chop the bacon, set aside

3Zest the lemon and aside. If you do not have a zester, use vegetable peeler and finely dice the strips

4Place a large sauté pan on stove on medium high heat

5Add 2 tablespoons oil and add the leeks. Cook for 8-10 minutes until the leeks are slightly golden

6Add Turkey bacon, cook additional 6-8 minutes. Stirring to incorporate

7Add both zucchini noodles, lemon zest, and juice from the lemon. Stir to incorporate all ingredients

8Add egg whites and parmesan cheese. If necessary add 2-4 T warm water to create sauce

9Finish by stirring in the chopped fresh parsley
