Turkey Bacon Carbonara


    • 1 pack Kunzler Turkey Bacon, chopped into ½ - ¾ “pieces
    • 4 each Leeks, cut crosswise into thin slices
    • 2 Tbsp. Oil
    • 1 pack Green Zucchini “noodles”
    • 1 pack Yellow Zucchini “noodles”
    • 1 each Lemon
    • 6 oz. Egg whites
    • ½ Cup Parmesan Cheese
    • ½ Cup Fresh Parsley, chopped (optional)

Cooking Instructions

  1. 1Chop the leeks, place in large container with cold water. Rinse to remove any dirt

  2. 2Chop the bacon, set aside

  3. 3Zest the lemon and aside. If you do not have a zester, use vegetable peeler and finely dice the strips

  4. 4Place a large sauté pan on stove on medium high heat

  5. 5Add 2 tablespoons oil and add the leeks. Cook for 8-10 minutes until the leeks are slightly golden

  6. 6Add Turkey bacon, cook additional 6-8 minutes. Stirring to incorporate

  7. 7Add both zucchini noodles, lemon zest, and juice from the lemon. Stir to incorporate all ingredients

  8. 8Add egg whites and parmesan cheese. If necessary add 2-4 T warm water to create sauce

  9. 9Finish by stirring in the chopped fresh parsley
