Turkey Bacon Croquettes

for 14 servings

    • 1 pack Kunzler Turkey Bacon
    • 1 lb. Potatoes, peeled and diced
    • 2 T Butter
    • 4 T Half & Half
    • 1 ½ C Shredded Italian Cheese Blend
    • 1 t Salt
    • ½ C Flour
    • 3 ea. Eggs
    • 2 C Italian Seasoned Bread Crumbs

Cooking Instructions

  1. 1Preheat oven to 350 F. Remove bacon from packaging, layout on sheet tray

  2. 2Place tray of bacon in the oven, bake until golden brown. Approximately 18-20 minutes

  3. 3Peel and dice potatoes, place in large pot cover with water. Place on burner set to high heat. Cook until fork tender.

  4. 4Drain potatoes, mash completely. Stir in butter, half and half, salt, and cheese.

  5. 5Using a small scoop or large spoon, scoop into 14 equal portions. Gently roll into ball or cylinder shape.

  6. 6Place on sheet tray and refrigerate for approximately 25 minutes.

  7. 7Setup a breading station using 3 medium sized bowls.

  8. 8First bowl add the ½ C flour. Second bowl beat the 3 eggs. And the last bowl add the 2 C seasoned bread crumbs.

  9. 9Use one hand for the dry breading’s and one hand for the eggs. This will help prevent breading your fingers.

  10. 10Dust the croquettes in the flour, transfer to the eggs, and allow excess drip off, finish by covering in bread crumbs.

  11. 11Transfer to a paper lined tray, and repeat steps until all croquettes are completely breaded.

  12. 12Setup a fryer to 350 F. If you don’t have an air fryer or tabletop fryer place large pot with oil on medium high heat.

  13. 13Fry croquettes in batches, turning if necessary. Croquettes should be finished in 4-6 minutes.
